Chocolate Orange Marble Cake

Over the weeks we have tried and tested many recipes for Marble Cake, until we perfected this particular recipe. The result is the most deliciously, moist cake with a delightful orange twist. Best eaten within two to three days – that’s if the cake lasts that long.


Ingredients

For the Cake

  • 4 medium eggs
  • 250g/8oz self raising flour
  • 250g/8oz caster sugar
  • 250g/8oz soft margarine
  • Juice 1 orange
  • Zest 2 oranges
  • 1 tbsp cocoa powder blended with 2 tbsp hot

Icing

  • 170g/6oz icing sugar
  • 55g/2oz Margarine
  • Juice 1 Orange

Preparation

  1. 22cm sandwich tin – well-greased and base lined with Bake-O-Glide.
  2. Put all cake ingredients into a bowl and mix with wooden spoon until smooth. Add blended cocoa powder to half of the cake mixture.
  3. Spoon cake mixtures into tin, alternating until full to create a marble effect. Gently stir, to ensure there are no gaps in the mixture.
  4. Place tin on grid shelf
  5. 2 oven AGA – Roasting oven – grid shelf on the floor and plain shelf on bottom set of runners. Bake for 25 minutes.
  6. 3-4 oven AGA – Baking oven – grid shelf on bottom set of runners. Bake for 35-40 minutes.
  7. Remove from oven when cake is lightly golden and springy to touch. Leave to cool in tin and when cold cover with orange icing.
