Fran’s Trio of Cupcakes

A tasty trio of Chocolate Orange, Lemon and Raspberry cupcakes that are fun to make and look great too. Perfect for afternoon tea, family events or parties.


Ingredients

  • 8oz Caster Sugar
  • 8oz Unsalted Butter
  • 8oz Self Raising Flour
  • 4 eggs
  • 1tsp Vanilla Essence (optional)
  • 1tsp Baking Powder (optional)

For the Chocolate Orange Icing (Makes enough for 12 cakes)

  • 1/2 Bag of Royal Icing
  • 1/2 Orange

For the Lemon Icing (Makes enough for 12 cakes)

  • 1/2 Bag of Royal Icing
  • 1/2 Lemon

For the Raspberry Icing (Makes enough for 12 cakes)

  • 1/2 Bag of Royal Icing
  • 4 tbsp raspberry coulis

Preparation

  1. Beat the butter and sugar together until a creamy texture starts to form, add in each egg at a time making sure that it is thoroughly mixed in and add the Vanilla essence
  2. Sieve the flour into the butter, sugar and egg (add baking powder if you like)
  3. Mix this well until it thickens
  4. Slowly start to spoon the mixture into cupcake cases, about one table spoon per case
  5. Put in the oven at around 180c for about 20mins (fan setting if you have a conventional oven or baking oven if you have an Aga).

For the Icing

Chocolate orange: Mix royal icing with orange juice with a hand whisk until it resembles soft peaks, add melted chocolate to the sides of your piping bag then add the icing which will create a swirl effect when piping. Add a segment of chocolate orange for decoration.

Lemon: Mix royal icing with lemon juice with a hand whisk until it resembles soft peaks, add some lemon curd to the sides of your piping bag then add the icing which will create a swirl effect when piping. Add a segment of lemon for decoration.

Raspberry: Mix icing sugar with raspberry coulis until slightly thick but still runny enough to run over the top of the cupcake. Add a raspberry for decoration.
