Orange Drizzle Tray Bake

This incredibly tasty treat is a moist, zesty orange, sponge cake, that is quick, easy to make and fun for the whole family. Taking little over 40min to prepare and cook, this is a great Sunday morning bake.


Ingredients

  • 4 Medium Eggs
  • 225g(8oz) Self Raising Flour
  • 225g(8oz) Caster Sugar
  • 225g(8oz) Soft Tub Margarine
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Essence
  • 2 Oranges
  • 100g(4oz) Icing Sugar

Preparation

  1. Place the eggs, flour, margarine, caster sugar and vanilla essence in a mixing bowl. Stir well with a wooden spoon until light and fluffy and all the margarine has been mixed in. Add the zests of 2 oranges and the juice of half of one of the oranges to the mixture and stir well to mix in.
  2. Line a small roasting tin with a sheet of Bake O Glide and spoon in the cake mixture.
  3. For a two oven Aga:- Hang the tin on the bottom set of runners of the roasting oven. Slide the cold shelf onto the second set of runners from the top of the oven and bake the cake for 25-30 minutes, until golden brown and firm to the touch when pressed lightly in the middle.
    For the three and four oven Aga:- Hang the tin on the bottom set of runners of the baking oven and bake the cake for 30-35 minutes, until golden brown and firm to the touch when pressed lightly in the middle.
  4. When cool enough to handle, take the cake out of the tin and squeeze some more orange juice on to it then leave to cool completely on the Bake O Glide on a cooling rack.
  5. Once cool drizzle with icing made up using some more of the orange juice, cut in to squares and serve.
