Mint Chocolate Cake

A must for all lovers of Chocolate and Mint this divine twist on a classic sponge is easy to make and tastes great. Rich chocolate and cool mint work perfectly together and especially with cream or custard.


Ingredients

  • 8oz Self Raising Flour
  • 8oz Caster Sugar
  • 8 oz Margarine
  • 4 Eggs
  • Baking Powder
  • 1 Box Mint Matchmakers

For the Filling

  • 8oz Icing Sugar
  • 4 oz Butter

Preparation

  1. Place about half the box of chocolates on the back of the aga to melt.
  2. Cream the flour, sugar, eggs, margarine and 1 tea spoon of baking powder together
  3. Mix 1 dessert spoon of cocoa powder with 1 and a half dessert spoons of hot water and add to the cake mixture.
  4. Add the melted chocolate to the cake mixture and stir well
  5. Divide mixture into 2 x 8 inch cake tins
  6. Bake on the third set of runners in the baking oven for approx. 25 minutes.
  7. For the Filling – Melt most of the remaining chocolate on the Aga leaving some for decoration
  8. Cream the butter and icing sugar together , add melted chocolate
  9. Spread through the middle of the cake and on top.
  10. Zest some chocolate fingers over the top and use any remaining to decorate or just eat!
