Jane, who lives in Chaffcombe, Somerset, has an Dual Control Aga and wanted to share her family ‘all in one’ recipe.


For the Tray bake

  • 8oz butter – softened at room temperature
  • 8oz caster sugar
  • 10oz SR flour
  • 2 level teaspoon baking powder
  • 4 medium eggs
  • 4 tablespoons milk
  • Zest of two lemons

For the Topping

  • 85g granulated sugar
  • Juice of two lemons


  1. Base line an Aga 23x23cm square cake tin with Bake-O-Glide.
  2. Butter around edges.
  3. Mix all the tray bake ingredients together.
  4. Pour into cake tin and level.
  5. Cook in the baking oven, with the grid shelf on the bottom set of runners, for approximately 30 minutes.
  6. Cool in tin and when cold, prick cake all over with bbq skewer, cover with sugar and lemon juice.
