Kim’s Zesty Lemon Cake

Kim’s zesty Lemon Cake for a zingy blast of citrus. A tasty quick bake great for Sunday mornings with a freshly brewed coffee.


  • 8oz Self Raising Flour
  • 8oz Caster Sugar
  • 4 Medium Eggs
  • 8oz Margerine
  • 1 Tea spoon baking powder
  • 2 Large Lemons
  • Lemon Curd
  • 2 x 8 inch cake tins


  1. Line the tins with bake o glide and grease the edges
  2. Sieve the flour and baking powder into a mixing bowl
  3. Add the sugar , eggs ,and margarine.
  4. Zest both lemons into the mixture and the juice of one.
  5. Mix together thoroughly and put into the two tins evenly.
  6. Place on the grid shelf on the third set of runners in the Aga baking oven
  7. Bake in the Aga or 20 -25 minutes
  8. Prick the cake and squeeze additional lemon juice over the cake
  9. When cooled spread the lemon curd in the middle of the cake
  10. Dust with icing sugar
