Duck and Hoisin Filo Baskets

Sweet and tangy duck in crispy filo parcels topped with a cucumber heart, great finger food to have pre valentines meal. A recipe by our resident Aga demonstration chef David Pengelly.


  • 2 Duck breasts or legs
  • 6tbsp Hoisin sauce
  • Half Cucumber
  • 1 pkt filo pastry
  • 4oz butter


  1. Add Duck breasts or legs to a baking tray and place in the Aga roasting oven (or standard oven on high) for 20 minutes
  2. Transfer the duck to the Aga simmering oven (or reduce the heat to cook low and slow) for 2 – 3 hours
  3. Once cooked shred the duck and mix with Hoisin sauce about 6tbsp or to taste
  4. Melt the butter in a basin, lay a sheet of filo pastry onto the work top and brush with butter cover with a 2nd sheet
  5. Cut 4 strips length ways then cut into squares and line mini muffin tins
  6. Brush with butter, repeat with another 2 sheets of pastry and layer into the muffin tins to form 4 layers
  7. Bake on the floor in the Aga roasting oven for approximately 8 – 10 minutes until golden and crisp
  8. Cut the cucumber into mini heart shapes
  9. Add the duck mix to the filo parcels and place the cucumber on top
