Mini Mince Pie Recipe

The quintessential Christmas treat these mini mince pies are great as a finger food over the Christmas period plus you can eat a lot more before you start feeling guilty.


Ingredients

  • 8oz Cold butter (chopped)
  • 12oz Plain flour
  • 4oz Icing Sugar
  • Zest of Orange
  • 1 Jar of Mincemeat
  • 1 Roll of Pastry

Preparation

  1. Combine all the ingredients together in a food processor until breadcrumb stage
  2. Tip out onto work surface and knead together, rest for 20 mins plus
  3. Place grid shelf on the bottom and if the mince pies are browning to quick use the cold plain shelf.
  4. Cut pastry into 24 equal pieces, cut off 2/3 and press each into the tin (you can use the end of a small rolling tin to do this)
  5. Spoon in the mincemeat
  6. Take remaining pastry roll into balls then flatten to make lid you can make the lids festive by using a star or Christmas tree cutter
  7. You can freeze the mince pies at this stage (but remember to defrost before baking)
  8. Bake for 12 – 15 minutes (either Aga roasting oven 200c or conventional fan oven 180c) until golden
  9. Cool the mince pies for 10 minutes (a little twist at this stage will stop them from sticking in the tin)
  10. Once completely cool remove from the tin and dust with icing sugar
